  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the grated zucchini, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Beat in the eggs and vanilla extract until the mixture is smooth.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients until just combined.
  6. If using, fold in the chopped walnuts.
  7. Divide the batter evenly among the prepared muffin cups.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
