Veggie-Packed Quinoa Casserole

A delicious and nutritious quinoa casserole loaded with veggies.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup chopped bell pepper
  • 1 cup chopped zucchini
  • 1 cup chopped broccoli
  • 1 can black beans, drained and rinsed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, combine quinoa and vegetable broth, bring to a boil.
  3. Reduce heat, cover and simmer for 15 minutes until the quinoa is fluffy.
  4. In a mixing bowl, combine cooked quinoa, bell pepper, zucchini, broccoli, black beans, and spices.
  5. Transfer to a greased casserole dish, top with cheese if desired.
  6. Bake for 25-30 minutes until heated through and cheese is melted.

Notes

  • Feel free to add other vegetables or protein as desired.
  • This dish can be a great meal prep option.
