Vegan Turkey Roast

  • 2 cups cooked lentils
  • 1 cup breadcrumbs
  • 1/2 cup finely chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup soy sauce
  • 1/4 cup nutritional yeast
  • 1/2 cup vegetable broth
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine lentils, breadcrumbs, onion, garlic, paprika, thyme, salt, and pepper.
  3. Add soy sauce, nutritional yeast, vegetable broth, and olive oil to the mixture. Stir until well combined.
  4. Shape the mixture into a loaf and place it in a baking dish.
  5. Bake for 45–50 minutes, until the top is golden brown.
