Vegan Mushroom Bourguignon (Easy Recipe)

  • 2 cups mushrooms, sliced
  • 1 cup carrots, diced
  • 1 cup onions, chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 teaspoon thyme
  • 1 bay leaf
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add sliced mushrooms and cook until browned.
  4. Stir in carrots, followed by red wine and scrape the bottom for flavor.
  5. Add vegetable broth, tomato paste, soy sauce, thyme, and bay leaf; bring to a simmer.
  6. Reduce heat and let it cook for 30 minutes, stirring occasionally.
  7. Season with salt and pepper before serving.
