Ingredients

  • 1/2 cup coconut oil, melted
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup dairy-free chocolate chips
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the melted coconut oil with the sugars until well combined.
  3. Add in the vanilla extract and mix again.
  4. Sift in the flour, baking soda, and salt, then stir until just combined.
  5. Fold in the chocolate chips.
  6. Drop tablespoon-sized balls of dough onto a baking sheet.
  7. Bake for 10-12 minutes, or until the edges are golden.
  8. Let cool before serving.

Notes

  • For a chewier cookie, chill the dough for 30 minutes before baking.
  • Store cookies in an airtight container for up to a week.
