- 1 cup all-purpose flour
- 1/2 cup coconut oil, melted
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup dairy-free chocolate chips
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the melted coconut oil with the sugars until well combined.
- Add in the vanilla extract and mix again.
- Sift in the flour, baking soda, and salt, then stir until just combined.
- Fold in the chocolate chips.
- Drop tablespoon-sized balls of dough onto a baking sheet.
- Bake for 10-12 minutes, or until the edges are golden.
- Let cool before serving.
Notes
- For a chewier cookie, chill the dough for 30 minutes before baking.
