Vegan Butternut Squash Mac and Cheese

A delicious and creamy vegan mac and cheese made with butternut squash that delivers indulgence without the dairy.

  • 8 ounces elbow macaroni
  • 1 cup nutritional yeast
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place butternut squash on a baking sheet and roast until tender, about 25 minutes.
  3. Cook elbow macaroni according to package instructions; drain and set aside.
  4. In a blender, combine roasted butternut squash, nutritional yeast, olive oil, vegetable broth, garlic powder, onion powder, smoked paprika, salt, and pepper. Blend until smooth.
  5. Mix the sauce with the cooked macaroni, stirring until well combined.
  6. Serve immediately or bake in the oven for a few minutes until bubbly.

Notes
