  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger, cooking until fragrant.
  4. Add the red curry paste and cook for another minute.
  5. Pour in the vegetable broth and coconut milk, bringing the mixture to a simmer.
  6. Add the mixed vegetables, soy sauce, and lime juice.
  7. Simmer for about 15 minutes, until the vegetables are tender.
  8. Stir in the fresh cilantro just before serving.
