Ingredients

  • 8 ounces sun-dried tomatoes
  • 1 pound pasta of choice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh basil, chopped

Instructions

  1. Boil the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add minced garlic and sun-dried tomatoes. Sauté for 2-3 minutes.
  3. Pour in the heavy cream and stir well. Bring to a simmer.
  4. Add grated Parmesan cheese, salt, pepper, and red pepper flakes. Mix until the cheese is melted and the sauce is creamy.
  5. Combine the cooked pasta with the sauce. Toss well to coat.
  6. Garnish with fresh basil before serving.

Notes

  • For a richer flavor, you can add a splash of white wine to the sauce.
  • Make sure to reserve some pasta water to adjust the sauce consistency if needed.
