Stained Glass Christmas Cookies

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed hard candies (various colors)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the flour, baking powder, and salt.
  3. In another large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, and mix until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Chill the dough for at least an hour.
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Use cookie cutters to cut out the cookies and then cut out small shapes in the center of each cookie.
  9. Place the cookies on a lined baking sheet and fill the center with crushed hard candies.
  10. Bake for 8-10 minutes or until the edges are lightly golden.
  11. Let cookies cool completely before removing them from the baking sheet.

Notes
