Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1 cup feta cheese
  • 2 tablespoons cream cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together spinach, feta cheese, cream cheese, lemon juice, garlic powder, onion powder, salt, and pepper until well combined.
  3. Lay the salmon fillets on a clean surface and spread the spinach mixture evenly on top of each fillet.
  4. Carefully roll up each fillet and secure with toothpicks.
  5. Place the salmon pinwheels in a baking dish and bake for 20-25 minutes or until the salmon is cooked through.
  6. Remove from oven, let cool slightly, and serve warm.
