- 1 cup besan (gram flour)
- 4 cups water
- 1 teaspoon turmeric powder
- 2 teaspoons salt
- 1 teaspoon red chili powder
- 1 cup mixed vegetables (potatoes, carrots, and okra)
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2 green chilies, slit
- 1 tablespoon ginger-garlic paste
- 2 tablespoons fresh coriander, chopped
- In a bowl, mix besan with water to make a smooth batter.
- In a pot, heat oil and add cumin seeds.
- When they splutter, add ginger-garlic paste and green chilies.
- Add the mixed vegetables and sauté for a few minutes.
- Pour the besan mixture into the pot, add turmeric, salt, and red chili powder.
- Bring it to a boil, then reduce heat and simmer for 20-30 minutes.
- Garnish with fresh coriander before serving.

- Feel free to add your favorite vegetables to the kadhi.
- This dish pairs well with steamed rice or chapati.
