  • 1 pound salmon fillet
  • 1 sheet puff pastry
  • 2 cups spinach
  • 1 egg
  • 1 teaspoon lemon juice
  • 1 garlic clove, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat and sauté the garlic until fragrant.
  3. Add the spinach and cook until wilted. Season with salt, pepper, and lemon juice.
  4. Roll out the puff pastry on a floured surface and place the salmon in the center.
  5. Spread the sautéed spinach over the salmon. Fold the pastry over the filling and seal edges.
  6. Brush the top with beaten egg and make small slits for steam to escape.
  7. Bake in the preheated oven for 25-30 minutes or until golden brown.
