Delight in these easy and healthy rice paper egg rolls filled with turkey bacon and chicken ham.

Ingredients

  • 8 sheets rice paper
  • 4 ounces turkey bacon
  • 4 ounces chicken ham
  • 1 cup shredded carrots
  • 1 cup cucumber, julienned
  • 1 cup bean sprouts
  • 1/4 cup fresh cilantro
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  2. In the same skillet, briefly stir-fry the chicken ham until heated through.
  3. Prepare the rice paper sheets by soaking them in warm water until soft.
  4. On each rice paper, layer with turkey bacon, chicken ham, carrots, cucumber, bean sprouts, and cilantro.
  5. Drizzle with lime juice and soy sauce.
  6. Roll tightly, folding in the sides as you go.
  7. Serve with your favorite dipping sauce.

Notes

  • For added crunch, include lettuce leaves in the filling.
  • Customize the filling with your choice of vegetables.
