  • 1/2 cup sugar
  • 2 cups heavy cream
  • 1/2 cup pistachio paste
  • 1/4 cup unsalted butter
  • 1/4 cup water
  • 2 gelatin sheets
  • 1/2 cup chopped pistachios for garnish

Instructions

  1. In a saucepan, combine raspberries and sugar, and cook over medium heat until the mixture thickens, about 10 minutes.
  2. In a separate bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, mix pistachio paste and melted butter until smooth.
  4. Soak the gelatin sheets in cold water, then dissolve in warm water; mix into the raspberries.
  5. Fold the raspberry mixture into the whipped cream, followed by the pistachio mixture.
  6. Pour into cake molds and refrigerate for at least 4 hours, or until set.
  7. Garnish with chopped pistachios before serving.
