Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt.
  3. Add butter and mix until crumbly.
  4. Press the mixture into the bottom of a tart pan and bake for 20 minutes.
  5. In another bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest.
  6. Pour the mixture over the baked crust and scatter raspberries on top.
  7. Bake for an additional 25 minutes.
  8. Let cool before serving.
