- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1/3 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh raspberries
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and salt.
- Add butter and mix until crumbly.
- Press the mixture into the bottom of a tart pan and bake for 20 minutes.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, and lemon zest.
- Pour the mixture over the baked crust and scatter raspberries on top.
- Bake for an additional 25 minutes.
