Pioneer Woman Mexican Chicken Casserole

A delicious and easy-to-make casserole that the whole family will love, combining flavors of Mexican cuisine with tender chicken.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups shredded cheese
  • 1 package tortilla chips
  • 1 tablespoon taco seasoning
  • 1/2 cup diced onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and half of the cheese.
  3. In a 9×13 inch baking dish, layer half of the tortilla chips, followed by the chicken mixture, and then the remaining tortilla chips on top.
  4. Sprinkle the remaining cheese over the top.
  5. Bake for 25-30 minutes until the cheese is bubbly and golden.
  6. Let it cool for a few minutes before serving.

  • This dish can be assembled ahead of time and stored in the refrigerator before baking.
