Persian Noodle Soup

  • 4 cups chicken or vegetable broth
  • 1 cup fresh herbs (parsley, cilantro, mint)
  • 1 cup thinly sliced carrots
  • 1 cup sliced mushrooms
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 cup noodles (e.g., egg noodles or rice noodles)
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Stir in the sliced carrots and mushrooms, cooking for another 5 minutes.
  4. Pour in the chicken or vegetable broth, bringing it to a simmer.
  5. Add noodles and cook according to package instructions.
  6. In the last few minutes of cooking, stir in the fresh herbs and season with salt and pepper.
  7. Serve hot.
