  • 4 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the sliced peaches, sugar, and lemon juice, and set aside.
  3. In another bowl, mix flour, oats, brown sugar, and salt.
  4. Add melted butter and vanilla to the dry mixture and stir until crumbly.
  5. Press half the mixture into the bottom of a greased baking pan.
  6. Spread the peach mixture over the crust.
  7. Sprinkle the remaining crumb mixture on top of the peaches.
  8. Bake for 30-35 minutes, until golden brown.
  9. Allow to cool before cutting into bars.

Notes
