  • 2 tablespoons granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup baking soda
  • 1 large egg, beaten
  • 8 ounces mozzarella cheese, cut into sticks
  • 1 tablespoon coarse sea salt, for topping

Instructions

  1. In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture, and mix until a dough forms.
  3. Knead the dough for about 5-7 minutes until smooth. Let it rise for 1 hour.
  4. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper.
  5. Divide the dough into small balls and flatten each one. Place a mozzarella stick in the center and fold the dough around it, sealing it well.
  6. In a large pot, boil water and add baking soda. Boil each pretzel for about 30 seconds, then transfer to the baking sheet.
  7. Brush each pretzel with beaten egg and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes or until golden brown.
