Mocha Eclairs

Delight in the rich flavors of chocolate and coffee with these easy mocha eclairs.

Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup chocolate chips
  • 1/2 cup brewed coffee
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, combine water and butter; bring to a boil.
  3. Add flour and stir until the mixture pulls away from the sides of the pan.
  4. Remove from heat and let cool slightly before adding eggs one at a time.
  5. Pipe the mixture onto a baking sheet and bake until puffed and golden.
  6. Allow eclairs to cool, then fill with whipped cream mixed with coffee.
  7. Dip in melted chocolate chips to coat.

Notes

  • For a richer flavor, use espresso instead of brewed coffee.
  • Let the chocolate cool before dipping to prevent it from melting the cream filling.
