  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 red onion, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons olive oil

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add red onion and sauté until softened.
  3. In a bowl, combine spinach, feta, and mozzarella.
  4. Layer the mixture on half of each tortilla and fold over.
  5. Add the remaining olive oil to the skillet and place the quesadillas.
  6. Cook until golden brown on both sides, about 3-4 minutes each.
  7. Slice and serve warm.
