Mediterranean Cauliflower Soup Recipe with Herbs and Olive Oil

Ingredients

  • 1 head cauliflower, chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and cook until translucent.
  2. Add the minced garlic and sauté for another minute.
  3. Stir in the chopped cauliflower, salt, and pepper, cooking for about 5 minutes.
  4. Add the vegetable broth and bring to a boil. Reduce heat and simmer until the cauliflower is tender.
  5. Use an immersion blender to puree the soup until smooth. Stir in fresh thyme, parsley, and lemon juice.
  6. Serve hot, garnished with additional herbs if desired.

Notes
