- 2 large apples, peeled and chopped
- 200g castor sugar
- 175g unsalted butter, softened
- 3 large eggs
- 225g self-raising flour
- 1 tsp baking powder
- 2 tsp ground cinnamon
- 50g raisins
- Preheat the oven to 160°C (320°F).
- Cream the butter and sugar together until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- Fold in the flour, baking powder, and cinnamon.
- Add the chopped apples and raisins and mix until just combined.
- Pour the mixture into a prepared loaf tin.
- Bake for 50-60 minutes until golden brown and a skewer inserted comes out clean.
- Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
