A delicious and moist apple and cinnamon loaf cake recipe by Mary Berry, perfect for any occasion.

Ingredients

  • 2 large apples, peeled and chopped
  • 200g castor sugar
  • 175g unsalted butter, softened
  • 3 large eggs
  • 225g self-raising flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 50g raisins

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. Fold in the flour, baking powder, and cinnamon.
  5. Add the chopped apples and raisins and mix until just combined.
  6. Pour the mixture into a prepared loaf tin.
  7. Bake for 50-60 minutes until golden brown and a skewer inserted comes out clean.
  8. Leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
