Maple Dijon Roasted Apples & Carrots

  • 4 carrots, sliced
  • 3 tablespoons maple syrup
  • 2 tablespoons dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the apples and carrots.
  3. In a separate bowl, whisk together the maple syrup, dijon mustard, olive oil, salt, black pepper, and thyme.
