  • 1 cup ripe mango, mashed
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the mashed mango, melted butter, milk, and eggs. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Scoop the batter into the prepared muffin tins, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool before glazing.
  8. For the passion fruit glaze, mix passion fruit juice with powdered sugar until smooth and drizzle over cooled muffins.
