Lemongrass Chicken Noodles

Ingredients

  • 2 chicken breasts
  • 1 stalk of lemongrass
  • 200g rice noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 tablespoon vegetable oil
  • Fresh herbs for garnish

Instructions

  1. Prepare the chicken by slicing it into thin strips.
  2. Use a mortar and pestle to pound the lemongrass until fragrant.
  3. In a pan, heat the vegetable oil and sauté garlic and ginger.
  4. Add the chicken to the pan and stir-fry until cooked through.
  5. Stir in soy sauce and fish sauce, tossing to coat the chicken.
  6. Cook the rice noodles according to package instructions, then drain.
  7. Toss the cooked noodles with the chicken and sauce.
  8. Garnish with fresh herbs before serving.
