Lemon Butter Salmon with Crispy Potatoes and Roasted Broccoli Recipe

A delicious and easy recipe for Lemon Butter Salmon served with crispy potatoes and roasted broccoli.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons lemon juice
  • 1/4 cup unsalted butter
  • 1 teaspoon garlic, minced
  • 1 teaspoon fresh dill, chopped
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small saucepan, melt butter and add lemon juice, garlic, and dill. Stir well.
  3. On a baking sheet, toss potatoes with olive oil, salt, and pepper. Roast for 20 minutes.
  4. Add broccoli to the baking sheet and drizzle with half of the lemon butter sauce. Roast for an additional 15 minutes.
  5. On another baking sheet, place salmon fillets and brush with remaining lemon butter sauce. Bake for 12-15 minutes.
  6. Serve salmon with crispy potatoes and roasted broccoli.

Notes

  • For extra flavor, marinate the salmon in the lemon butter mixture for 30 minutes before cooking.
