Jamie Oliver Broccoli Soup Recipe

A comforting and easy broccoli soup recipe that is perfect for any time of the year.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until the onion is translucent.
  3. Add broccoli florets and vegetable broth, then season with salt and pepper.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes until broccoli is tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. If desired, stir in heavy cream before serving.

Notes

  • This soup can be made vegan by omitting the heavy cream.
