- 100g granulated sugar
- 300g mascarpone cheese
- 200ml heavy cream
- 200ml strong coffee
- 150ml lemon juice
- 100g ladyfinger biscuits
- zest of 2 lemons
- 50g powdered sugar
- Separate the egg yolks and whites. Beat egg yolks with granulated sugar until creamy.
- Add mascarpone and mix well.
- In another bowl, whip the heavy cream until soft peaks form, then fold it into the mascarpone mixture.
- In a shallow dish, mix coffee and lemon juice. Quickly dip each ladyfinger into the mixture.
- Layer lemon zest, dipped ladyfingers, and mascarpone mixture in a serving dish.
- Repeat layers and finish with the mascarpone mixture on top.
- Chill in the fridge for at least 4 hours before serving.
Notes
- For an extra lemony kick, add more zest on top before serving.
