Ingredients

  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 stalks celery, sliced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups egg noodles
  • Salt and pepper to taste

Instructions

  1. Set the Instant Pot to sauté mode and add olive oil.
  2. Add chopped onion, carrots, celery, and garlic; sauté until softened.
  3. Add chicken breasts, broth, thyme, oregano, salt, and pepper.
  4. Close the lid and set to high pressure for 10 minutes.
  5. After the timer goes off, quickly release the pressure.
  6. Remove chicken, shred, and return to the pot.
  7. Add egg noodles and set to sauté until noodles are tender.
