High Protein Sausage Pancake Muffins

These High Protein Sausage Pancake Muffins are a delicious and nutritious way to start your day. Packed with flavor and protein, they’re perfect for meal prep!

Ingredients

  • 1 pound turkey bacon
  • 2 cups pancake mix
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Cook the turkey bacon until crispy, then chop it into small pieces.
  3. In a bowl, mix the pancake mix, eggs, milk, vanilla extract, maple syrup, and baking powder.
  4. Fold in the chopped turkey bacon.
  5. Pour the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until golden brown.
  7. Allow to cool before removing from the tin.
