1 pound turkey bacon
2 cups pancake mix
2 eggs
1 cup milk
1 teaspoon vanilla extract
1 tablespoon maple syrup
1 teaspoon baking powder
Instructions
Preheat the oven to 350°F (175°C) and grease a muffin tin.
Cook the turkey bacon until crispy, then chop it into small pieces.
In a bowl, mix the pancake mix, eggs, milk, vanilla extract, maple syrup, and baking powder.
Fold in the chopped turkey bacon.
Pour the batter into the muffin tin, filling each cup about 2/3 full.
Bake for 15-20 minutes or until golden brown.
Allow to cool before removing from the tin.
