- 4 slices turkey bacon
- 1 tablespoon olive oil
- 1 cup chopped onions
- 2 cloves garlic, minced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- Add olive oil, onions, and garlic to the pot and sauté until onions are translucent.
- Add broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Blend the soup until smooth, then return to heat and stir in cheddar cheese and milk.
- Season with salt and pepper to taste. Crumble the cooked turkey bacon on top before serving.
Notes
- This soup can be easily made vegetarian by omitting the turkey bacon.
- For a thicker soup, blend more of the broccoli.
