  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated zucchini, rolled oats, almond flour, honey, melted coconut oil, vanilla extract, cinnamon, baking powder, and salt.
  3. If using, fold in the chocolate chips until evenly distributed.
  4. Drop tablespoons of the cookie dough onto the prepared baking sheet, spacing them apart.
  5. Bake for 15-20 minutes or until the edges are golden.
  6. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
