- 2 medium eggplants
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 cups spinach, sautéed
- 2 cups marinara sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- Slice the eggplants lengthwise and salt them to remove excess moisture.
- After 30 minutes, rinse and pat dry the eggplants.
- Grill or bake the eggplant slices until tender.
- In a bowl, mix ricotta, mozzarella, Parmesan, egg, sautéed spinach, Italian seasoning, salt, and pepper.
- Spread marinara sauce on the bottom of a baking dish.
- Fill each eggplant slice with the cheese mixture and roll them up.
- Place rollatini seam-side down in the baking dish and top with remaining marinara sauce.
- Bake for 25-30 minutes until bubbly and golden.
- Let cool slightly before serving.
