Healthy Eggplant Rollatini

A delicious and healthy twist on traditional eggplant rollatini, perfect for a veggie-filled meal.

Ingredients

  • 2 medium eggplants
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 cups spinach, sautéed
  • 2 cups marinara sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants lengthwise and salt them to remove excess moisture.
  3. After 30 minutes, rinse and pat dry the eggplants.
  4. Grill or bake the eggplant slices until tender.
  5. In a bowl, mix ricotta, mozzarella, Parmesan, egg, sautéed spinach, Italian seasoning, salt, and pepper.
  6. Spread marinara sauce on the bottom of a baking dish.
  7. Fill each eggplant slice with the cheese mixture and roll them up.
  8. Place rollatini seam-side down in the baking dish and top with remaining marinara sauce.
  9. Bake for 25-30 minutes until bubbly and golden.
  10. Let cool slightly before serving.

Notes

  • Serve with a side salad for a complete meal.
  • You can add other vegetables to the cheese mixture for extra flavor.
