Healthy Cucumber Pasta Salad

Ingredients

  • 8 ounces pasta of your choice
  • 2 large cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cucumbers, cherry tomatoes, red onion, turkey bacon, and parsley.
  3. In a separate bowl, mix the Greek yogurt, olive oil, lemon juice, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss to combine.
  5. Serve immediately or chill in the refrigerator for 30 minutes for the flavors to meld.
