Ingredients

  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the pasta according to package instructions and drain.
  2. In a large bowl, combine the diced cucumber, cherry tomatoes, bell pepper, and red onion.
  3. Add the cooked pasta to the bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  5. Pour the dressing over the pasta and vegetables, then toss to combine.
  6. Garnish with fresh parsley before serving.
