Healthy Cucumber Pasta Salad

A light and refreshing cucumber pasta salad with a twist of turkey bacon for added flavor.

Ingredients

  • 2 cups pasta
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the cooked pasta, cucumber, cherry tomatoes, turkey bacon, red onion, and feta cheese.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • This salad can be made a day in advance for better flavor.
  • Substitute turkey bacon with regular bacon if desired.
