Healthy & Creamy Tuscan Salmon Pasta

Ingredients

  • 8 ounces whole grain pasta
  • 2 tablespoons olive oil
  • 1 pound salmon fillets
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat the olive oil over medium heat and add the salmon fillets. Cook for 5-6 minutes on each side or until cooked through. Remove and flake the salmon.
  3. In the same skillet, add spinach and tomatoes. Sauté until spinach wilts.
  4. Stir in the heavy cream, garlic powder, and Italian seasoning. Mix well.
  5. Add the flaked salmon and cooked pasta to the skillet. Toss to combine. Season with salt and pepper.
