  • 1 cup couscous
  • 1.5 cups vegetable broth
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup diced cucumber
  • 1/4 cup halved cherry tomatoes

Instructions

  1. Season the skirt steak with salt and pepper. Grill on high heat for 4-5 minutes on each side for medium-rare.
  2. In a saucepan, bring vegetable broth to a boil. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
