- 2 pounds skirt steak
- 1 cup couscous
- 1.5 cups vegetable broth
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup diced cucumber
- 1/4 cup halved cherry tomatoes
- Season the skirt steak with salt and pepper. Grill on high heat for 4-5 minutes on each side for medium-rare.
