## Green Herby Chicken and Rice Soup

Ingredients

  • 1 cup rice
  • 4 cups chicken broth
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  2. Add diced chicken and cook until no longer pink.
  3. Stir in the mixed vegetables and cook for a few minutes.
  4. Add chicken broth, rice, thyme, rosemary, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until rice is tender.
  6. Stir in fresh parsley before serving.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • This soup can be made in advance and stored in the fridge for up to 3 days.
