- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups vegetable broth
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup fresh spinach, chopped
- 2 tablespoons lemon juice
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Stir in the carrots and celery, cooking for another 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the chickpeas, oregano, salt, and pepper; reduce heat and simmer for 20 minutes.
- In the last 5 minutes, stir in the spinach and lemon juice.
- Serve hot and enjoy!

- This soup can be made in advance and stored in the refrigerator.
- Feel free to add other vegetables for additional flavor.
