Greek Healing Soup

A comforting Greek healing soup filled with wholesome ingredients that promote wellness.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 6 cups vegetable broth
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup fresh spinach, chopped
  • 2 tablespoons lemon juice

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Stir in the carrots and celery, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Add the chickpeas, oregano, salt, and pepper; reduce heat and simmer for 20 minutes.
  6. In the last 5 minutes, stir in the spinach and lemon juice.
  7. Serve hot and enjoy!

Notes

  • This soup can be made in advance and stored in the refrigerator.
  • Feel free to add other vegetables for additional flavor.
