  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice

  • 1/4 cup Greek yogurt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a mixing bowl, combine the pumpkin puree, eggs, and honey or maple syrup until smooth.
  3. Add the almond flour, rolled oats, baking powder, pumpkin pie spice, and salt. Mix well.
  4. Fold in the Greek yogurt and ensure everything is well combined.
  5. Spoon the batter into muffin liners, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.
