French Onion Chicken Orzo Casserole

  • 2 cups orzo pasta
  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 3 cups chicken broth
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (Swiss or Gruyere)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook orzo according to package instructions.
  3. In a skillet, cook turkey bacon until crispy, remove and chop.
  4. Add onions and garlic to the skillet, cooking until softened.
  5. Add chicken and broth, bring to a boil, then simmer until chicken is cooked through.
  6. Mix in the cooked orzo, bacon, thyme, salt, and pepper.
  7. Transfer to a baking dish, top with cheese, and bake for 20 minutes.
  8. Let cool slightly before serving.
