Flamiche aux Poireaux (French Leek Tart)

Flamiche aux Poireaux is a delicious and easy-to-make French tart that combines the flavors of leek, turkey bacon, and cheese.

  • 1 pie crust
  • 2 tablespoons olive oil
  • 3 leeks, cleaned and sliced
  • 4 ounces turkey bacon, chopped
  • 1 cup heavy cream
  • 2 eggs
  • 1 cup grated cheese (Gruyère or similar)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the leeks until soft.
  3. Add the turkey bacon to the skillet and cook until crispy.
  4. In a bowl, whisk together the cream, eggs, salt, and pepper.
  5. Spread the leek and bacon mixture over the pie crust.
  6. Pour the cream mixture over the top and sprinkle with cheese.
  7. Bake for 30-35 minutes or until the tart is set and golden.
  8. Allow to cool slightly before slicing and serving.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • Serve warm or at room temperature for best flavor.
