Fall Pasta Salad with Butternut Squash and Brussels

  • 8 ounces pasta of your choice
  • 1 medium butternut squash, peeled and cubed
  • 2 cups Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup feta cheese, crumbled

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss butternut squash and Brussels sprouts with olive oil, salt, and pepper.
  3. Roast in the oven for 25-30 minutes or until tender.
  4. Cook pasta according to package instructions. Drain and set aside.
  5. In a large bowl, combine roasted vegetables, pasta, walnuts, cranberries, and feta cheese.
  6. Toss to combine and adjust seasoning as needed.
