  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  4. Stir in pumpkin puree, vanilla extract, pumpkin pie spice, and salt until well combined.
  5. Pour the cheesecake batter over the crust. Swirl with a knife to create a marbled effect.
  6. Bake for 50-60 minutes until the edges are set but the center is slightly jiggly.
  7. Turn off the oven and leave the cheesecake inside for 1 hour.
  8. Remove from oven and cool completely before refrigerating for at least 4 hours or overnight.
