Easy 20-Min Indian Chicken Curry (Quick One-Pot Recipe)

  • 1 pound chicken, cut into pieces
  • 2 tablespoons cooking oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon fresh cilantro, chopped

Instructions

  1. Heat the oil in a pot over medium heat. Add the onion and sauté until translucent.
  2. Add the garlic and ginger, and cook for another minute.
  3. Stir in the curry powder, cumin, and turmeric, and cook for 30 seconds.
  4. Add the chicken pieces and brown them on all sides.
  5. Add the diced tomatoes and coconut milk. Bring to a simmer.
  6. Cover and cook for 20 minutes, or until the chicken is cooked through.
  7. Garnish with fresh cilantro before serving.
