  • 1 pound firm white fish, such as cod or tilapia
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon red curry paste
  • 1 cup jasmine rice
  • 2 cups water
  • 1 cup fresh spinach
  • 1 tablespoon fresh cilantro, for garnish

Instructions

  1. Rinse jasmine rice under cold water until water runs clear, then combine rice and water in a pot and bring to a boil.
  2. Reduce heat, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed.
  3. While the rice is cooking, heat a large skillet over medium heat.
  4. Add garlic and ginger, sauté for 1-2 minutes until fragrant.
  5. Add coconut milk, lime juice, fish sauce, and red curry paste, stirring to combine.
  6. Bring to a simmer, then add fish pieces and cook for 5-7 minutes until cooked through.
  7. Stir in fresh spinach just before serving.

Notes

  • For a spicier curry, add more red curry paste to taste.
  • Fresh cilantro adds a burst of flavor, so don’t skip it!
