  • 4 pieces chicken thighs
  • 2 cups button mushrooms, sliced
  • 1 cup shallots, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 1 teaspoon thyme, dried
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and brown the chicken thighs on both sides.
  3. Add the shallots and garlic, cooking until softened.
  4. Stir in the flour and cook for an additional minute.
  5. Pour in the chicken broth, heavy cream, and Dijon mustard, stirring to combine.
  6. Add the mushrooms and thyme, season with salt and pepper, and bring to a simmer.
  7. Transfer the mixture to a casserole dish and cover with foil.
  8. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes to brown the top.
