  • 1 cup diced mangoes
  • 1/2 cup shredded coconut

Instructions

  1. In a mixing bowl, whisk together the flour, milk, eggs, sugar, salt, and melted butter until smooth.
  2. Heat a non-stick pan over medium heat and pour a ladle of batter into the pan, swirling to coat the base.
  3. Cook for about 1-2 minutes until the edges lift, then flip and cook for another minute.
